Born and raised in Brussels with roots in Congo and Guinea, Issiaka Johnson found his way into the culinary world almost by chance seven years ago—an unexpected opportunity that grew into a lasting passion for technique, flavor, and self-expression through food. His cooking is deeply rooted in West African traditions, layered with technical precision and influences from East and West Asia, resulting in dishes that are bold, intense, and designed to awaken all five senses while staying honest and approachable.
For Issiaka, food is above all a tool for connection—a way to discover new cultures and bring people together around the table. Inspired by chefs like Mory Sacko, the team behind Ikoyi, and Mauro Colagreco, as well as his mother, who continues to share recipes and guidance with him, Issiaka builds his cooking on the belief that onions and garlic are the foundation of great flavor. During his residency at Platine, guests can expect a menu full of life, movement, and bold flavors, celebrating the richness of West African cuisine through a contemporary and personal lens.
